Last Wednesday, Mark Bittman had a brilliant article in the New York Times Food Section on 101 Simple Meals Ready in 10 Minutes or Less. There are no formal recipes, just outlines, and bringing pasta water to a boil doesn't count as part of those 10 minutes.
Bittman's dinner ideas are so effortless and appealing that it makes you wonder why we so often rely on bad takeout or unhealthy convenience foods. I'm ashamed to admit it, but I'm one of the worst offenders of all — I'm the queen of weeknight takeout.
I did an informal study around the Food Network to find out what some of the folks here like to cook in 10 minutes or less, and this is what I came up with:
Suki Hertz (Food & Drinks Editor) - Sauté thinly cut pork chops rubbed with spice blend (I love Penzey's Northwoods Fire) in a little olive oil, about 2 minutes per side. Serve it topped with a heap of arugula dressed in olive oil, lemon juice, salt and pepper, a few shaves of Parmigiano-Reggiano, and a lightly salted/peppered sliced heirloom tomato on the side
Katherine Alford (Test Kitchen Director) - Make a pot of couscous, serve with sauteed lamb sausages and a chopped cucumber, tomato and mint relish.
Sarah Copeland (Recipe Developer) - Smear toasted sprouted grain bread (Ezekial 4:9 brand) with fresh ricotta, sliced radishes, a sprinkle of sea salt, freshly ground pepper and fruity olive oil. Top with chopped chives if you have them on hand. Serve with simply dressed baby greens.
Mory Thomas (Recipe Developer) - Sauté chopped chorizo sausage in a little oil. While sausage is browning, slice kernels off fresh corn. Add corn kernels to the pan and cook until corn starts to caramelize (about 1 minute). Add chopped green onions and serrano chile. Remove from the heat and stir in fresh cilantro, crumbled cotija cheese and mayonnaise. Serve with tortillas.
Vince Camillo (Food Stylist) - Sear a strip steak and served thinly sliced over a salad of greens, cherry tomatoes, feta cheese, peaches and almonds, all drizzled with a little aged balsamic vinegar and extra-virgin olive oil.
Robert Bleifer (Executive Chef) - Season peeled shrimp with salt and aleppo pepper; sear in a hot skillet with olive oil and a clove of chopped garlic. Remove the shrimp and add damp, clean spinach. Cook until wilted. Return the shrimp to the pan, add the zest and juice of one lemon; toss.
Miriam Garron (Sous Chef) - Boil diced new potatoes in salted water. Combine undrained Italian tuna (light tuna packed in oil) and chopped red onion in a medium bowl. Drain potatoes and immediately add to tuna mixture while they're still hot. Season with red wine vinegar, salt and pepper. Add chopped celery and celery leaves last. Eat while still warm.

I love a good salad. Start with mixed greens. Add cherry tomatoes, sweet whole kernel corn, thinly sliced red onion, and a can of tuna. For dressing I add a little mayo (helps to add a little creaminess), olive oil, balsamic vinegar, and salt and pepper to taste.

Mmm Noodle Soup.
Cut up some scallions and add them to each bowl. Buy some asian powdered soup base and add to boiling pot of water. Add in asian rice noodles and an egg. Cook for 2 minutes. Turn off heat and pour over scallions. Add soy sauce to taste.

I pulled from my garden: green pepper, red pepper, yellow hungarian pepper and an onion and 3-4 cloves garlic. Rough chopped all an sauteed in a little olive oil. Added a large can of crushed tomatoes and used sauce over whole wheat pasta. Quick and yummy!

i love using chicken stock and asian noodles to create a wonderful dish. i put 2 cans of chicken stock, add some fish sauce, green onions, salt and pepper. meanwhile i prepare the noodles and saute some chicken with garlic. when the noodles are done, i spoon the soup over it, add the chicken, and a hint of lime, sirache chile sauce, and hoisin sauce finish the dish.

ANGEL HAIR PASTA is a favorite of ours. While the water is coming to a boil we grab a large bowl and and toss in a few CAPERS, sliced BLACK & GREEN OLIVES, chopped SUN-DRIED TOMATOES in oil (and a little of that oil) plus a bit of OLIVE OIL. Sprinkle in ITALIAN SEASONING and a little TOMATO SAUCE. Cook & drain the pasta then add it to the bowl; toss & enjoy!
Additions: Balsamic Vinegar, Garlic, Parmesan Cheese, Salt & Papper and chopped Tomato.

Spicy Crab Pasta is great fast food. I boil FRESH pasta and in another pan gently heat up olive oil, chopped garlic and sweet red chilis, a few dashes of hot sauce, and crab meat. After the pasta is drained I toss it into the sauce and top with torn basil and lemon zest and/or juice.

I cut up some sweet cherry tomatoes into a bowl, squeeze out 1 small garlic clove, toss in some chopped basil, a few pieces of very ripe Brie and a couple of tbsp of good extra virgin olive oil. Salt, pepper. Toss this together and then pour hot spaghetti over. The heat of the pasta melts the Brie and makes for a fresh yet creamy sauce.

I favorite of mine is to cook some thin spaghetti and while that is boiling start a pan with extra virgin olive oil, minced or chopped garlic in the jar, salt, pepper, and parmesan cheese, on med to low heat, then turn down very low. Once pasta is cooked, add to oil mixture, toss. Add more parm to taste. Simple, yet tasty. Another is the same pasta but instead take 2% milk in a pan, butter/margarine, minced garlic and parmesan cheese. Heat then toss with pasta...easy, tasty meal. Enjoy!

A VERY easy meal is to take a wrap (any type, my favorite are spinach wraps) and then trown anything you want into it, salads, meats, sandwhiches, veggies, etc and then roll it up and eat. You can have your entire meal, and all food groups in one wrap. Its incredibly easy to make and easy to eat (even on the go)!

Generously sprinkle store bought fajita seasoning over 2 chicken breasts. Grill on double-sided indoor grill such as George Foreman. While chicken is cooking, sautee one sliced red bell pepper and 1/2 sliced onion in a little olive oil over medium high heat (add oil or water as needed so they don't burn). When chicken is done, let it rest on a cutting board until veggies are cooked through & onions carmelize. Serve sliced chicken on microwave oven-warmed tortillas topped with red pepper & onion, good jarred salsa, sour cream, avacado, torned pieces of fresh cilantro & your favorite hot sauce (like JD Pappy's Hickory Heaven). Yum!

This is something my husband came up with and fixes often. Brown a pound of ground beef. Drain. Pour back into the pan with a can of tomatoes w/green chilis (Rotel) and a can of chili beans. Heat through and serve with corn chips, tortilla chips or fresh tortillas. Also have the picante sauce available for those who want it. YUM YUM

Sprinkle three or four large sea scallops with a mixture of salt, freshly ground pepper and ground toasted cumin seeds. Sear them 2-3 minutes on each side in a little olive oil in a hot saute pan. Serve them atop a bed of baby greens and halved cherry or grape tomatoe that have been dressed with a simple vinagrette of lime juice, olive oil, salt and pepper.

Here's a great, quick summertime dinner. Dice up some garden fresh tomatoes, place in a bowl. Add balsamic vinegar, 2 cloves garlic, fresh basil and some olive oil. Toss together and let stand a few minutes. Serve over angelhair and top with parmesan.

I like to make a quick & spicy Mediterranean pasta. Saute 2 minced garlic cloves in olive oil. Add 1 can (drained) white chicken,1/2 cup sliced black olives, and 1 small can (drained) sliced mushrooms. Then add 1 can Rotel tomatoes with juice. Heat until warm; in the meantime cook angel hair pasta. Combine chicken mixture with angel hair pasta and stir. Sprinkle parmesan cheese on top when serving, and add crusty french bread on the side.

Buy premade pesto sauce ( I like Contadina). Buy shrimp at market and have them peel and steam in garlic butter. At home cook bowtie pasta al dente. Then toss with the shrimp and the pesto. Add a little parmesan and sliced lemons. Very delicious hot or cold and looks pretty!

I like to use canned chicken. I make a quick butter and flour roux. Cook it for a couple of minutes, drain the broth for the chicken into the roux to make the sauce. Once it is thickened add the chicken. Heat and serve over mashed potatoes, biscuits, toast or rice. Throw in some peas for color.

I often make quick Chicken Patties, similar to salmon croquettes, using the following: Canned white meat chicken, drained (large can), 2 eggs, 1/2 cup saltine cracker crumbs (smash crackers in zipper bag), and 2-3 thinly sliced green onions. Mix all together, then fry in olive oil or vegetable oil on medium heat, approximately 3-4 minutes per side. Season with salt & pepper. Yumm-O!!!

Quick, simple Mediterranean Pasta:
Cook some angel hair pasta al dente.
For the sauce, saute 2-3 cloves of garlic, then a jar of drained, chopped artichoke hearts, 1/2 of a small can of sliced black olives, a handful of sundried tomatoes, 1/2 a jar of drained, rinsed capers, a few sliced mushrooms, and maybe some fresh baby spinach, in olive oil. When it is done, squeeze some lemon over the mixture, and serve over the pasta. Sprinkle with feta and/or toasted pine nuts. Yum!

I love easy to make, few ingredient meals and this one fits the bill. It's for CREAMED PEAS.
In a large skillet over low heat, stir in 4 TABLESPOONS BUTTER AND 4 TABLESPOONS FLOUR. Cook until flour is evenly coated. Turn heat to medium and stir in 1 1/2 CUP MILK, (1/2 CUP MILK at a time). Keep stirring until gravy is thick. Stir in a 16 OZ BAG OF FROZEN PEAS AND PEARL ONIONS. Add SALT AND PEPPER to taste. Cook until hot.

Take one large(51-60 count) bag frozen cooked shrimp,thaw in water, takes about 5 minutes. After thawed, marinate shrimp with extra virgin olive oil, 3 garlic cloves minced and parsley flakes, about ten minutes. Grill for about 5 minutes, turning once. While shrimp is grilling, cook some angel hair pasta al-denta. Mix shrimp and pasta together, toss with parmesan cheese, serve with garlic bread and salad greens topped with evoo and balsamic vinegar.This is one of my husbands favorite meals.

Tuna and mushroom pasta: saute eight crimini mushrooms, 2 cloves minced garlic, and a handful of chopped Italian parsley in olive oil while spaghetti is boiling; add one tin of (drained) good Italian tuna in olive oil (Cento or Tonno) and heat through; toss everything with the spaghetti and voila, a meal for two. I discovered this recipe about 12 years ago and since then have eaten it once a week; every time I serve it as a casual meal to guests, they clamor for the recipe.
